There is something wonderful about summer in Florida.<\/p>\n\n\n\n
Yes, it is hot.<\/p>\n\n\n\n
Very hot.<\/p>\n\n\n\n
But summer also brings something I absolutely love:<\/p>\n\n\n\n
fruit.<\/strong><\/p>\n\n\n\n Mangoes, pineapples, berries, lychees, peaches, and so many other beautiful fruits seem to appear everywhere.<\/p>\n\n\n\n Some arrive from farms.<\/p>\n\n\n\n Some come from farmers markets.<\/p>\n\n\n\n And sometimes someone simply shows up carrying a bag of mangoes from a tree that produced far more fruit than one family could possibly eat.<\/p>\n\n\n\n That abundance is one of my favorite sources of inspiration in the kitchen.<\/p>\n\n\n\n When making a good preserve, the fruit should always be the star.<\/p>\n\n\n\n That sounds obvious, but it changes the entire way you approach a recipe.<\/p>\n\n\n\n Instead of asking:<\/p>\n\n\n\n “How can I make this taste sweeter?”<\/em><\/p>\n\n\n\n I prefer asking:<\/p>\n\n\n\n “How can I preserve what already makes this fruit wonderful?”<\/em><\/p>\n\n\n\n A perfectly ripe mango already has personality.<\/p>\n\n\n\n A blackberry brings its own balance of sweetness and acidity.<\/p>\n\n\n\n A peach has a completely different aroma and texture.<\/p>\n\n\n\n The goal isn’t to hide those differences.<\/p>\n\n\n\n The goal is to celebrate them.<\/p>\n\n\n\n Few fruits say South Florida quite like mango.<\/p>\n\n\n\n When mango season arrives, suddenly everyone seems to know someone with a mango tree.<\/p>\n\n\n\n Ripe mangoes are fragrant, colorful, juicy, and naturally sweet.<\/p>\n\n\n\n And when transformed carefully into a preserve, that beautiful tropical flavor becomes something you can enjoy long after the fruit itself would have disappeared from the kitchen counter.<\/p>\n\n\n\n Spread it on toast.<\/p>\n\n\n\n Pair it with cheese.<\/p>\n\n\n\n Spoon it over yogurt.<\/p>\n\n\n\n Or, like me, occasionally eat a tiny spoonful directly from the jar in the name of “quality control.”<\/p>\n\n\n\n Very important work.<\/p>\n\n\n\n Pineapple brings another kind of summer flavor.<\/p>\n\n\n\n It has sweetness, but it also has acidity and brightness.<\/p>\n\n\n\n That contrast makes pineapple especially interesting because it can work beautifully in both sweet and savory combinations.<\/p>\n\n\n\n It can complement breakfast foods, desserts, cheeses, and even certain glazes.<\/p>\n\n\n\n That versatility is one of the reasons fruit preserves can be so much fun.<\/p>\n\n\n\n A single jar can travel through several completely different meals.<\/p>\n\n\n\n Lychee is different.<\/p>\n\n\n\n Its flavor is delicate, floral, and almost perfume-like.<\/p>\n\n\n\n It doesn’t need much interference.<\/p>\n\n\n\n Working with fruits like lychee reminds me that sometimes cooking is about knowing what not<\/strong> to add.<\/p>\n\n\n\n The fruit already knows what it wants to be.<\/p>\n\n\n\n Our job is simply to help it get there.<\/p>\n\n\n\n That is ultimately what preserves have always been about.<\/p>\n\n\n\n Taking something abundant and beautiful in one season and finding a way to enjoy it later.<\/p>\n\n\n\n There is something almost nostalgic about that idea.<\/p>\n\n\n\n You open a jar months later and suddenly remember the season when the fruit was everywhere.<\/p>\n\n\n\n The mangoes sitting on the counter.<\/p>\n\n\n\n The farmers market overflowing with produce.<\/p>\n\n\n\n The smell of fruit cooking in the kitchen.<\/p>\n\n\n\n A jar becomes a tiny memory.<\/p>\n\n\n\n At Sunny\u2019s Kitchen Delights, I love the idea of allowing nature to influence what comes next.<\/p>\n\n\n\n Not every flavor needs to be available every day of the year.<\/p>\n\n\n\n Sometimes part of what makes something special is knowing that it belongs to a particular moment.<\/p>\n\n\n\n A summer fruit.<\/p>\n\n\n\n A holiday flavor.<\/p>\n\n\n\n A seasonal experiment that turned into something unexpectedly wonderful.<\/p>\n\n\n\n Food becomes more exciting when we stay curious.<\/p>\n\n\n\n So when beautiful fruit appears, I start thinking.<\/p>\n\n\n\n What could this become?<\/p>\n\n\n\n What flavors might complement it?<\/p>\n\n\n\n What would happen if we put this in a jar?<\/p>\n\n\n\n And sometimes, somewhere between the garden, the market, and the kitchen…<\/p>\n\n\n\n a new Sunny\u2019s Kitchen Delight is born.<\/p>\n","protected":false},"excerpt":{"rendered":" Mango, pineapple, lychee\u2014South Florida summers overflow with extraordinary fruit.
